If you love ramen and sushi, get ready for a pleasant surprise in Yokohama’s vibrant Noge district. At Sushi and Ramen Uogashiya Noge (鮨とラーメン うおがしや 野毛), you’ll discover a rare harmony of delicate sushi craftsmanship and bold niboshi (dried sardine) ramen flavor—all under one roof. During my visit, I tried their signature “Sugoi Niboshi Ramen (Salt)”, and it turned out to be an unforgettable lunch experience.


An Unexpected Discovery in Noge’s Alleyways
Just one minute from Sakuragicho Station, Uogashiya Noge nestles on the first floor of the GS Plaza Sakuragicho Ekimae building. Originally opened in June 2020 as “Sugoi Niboshi Ramen Noge Sushi Tsurikin,” the restaurant quickly earned fame in Yokohama for blending sushi artistry and ramen soul.
Inspired by the lively alley culture of Noge Ichibangai, local restaurateur Mr. Hirao and his team created a new corner of culinary innovation—where fresh seafood meets perfectly balanced broths.
I visited slightly after 11 a.m. on a weekday, bought a ticket from the vending machine for the salt version of their famous Niboshi Ramen (すごい煮干しラーメン塩), and slipped inside the cozy 14-seat space. The air was already filled with the inviting aroma of roasted sardines, hinting at the delicious experience ahead.

A Bowl That Seduces the Senses
The moment my ramen arrived, steam rose like a flavorful fog. The golden broth, faintly cloudy yet clear, shimmered with tiny Aomori niboshi particles—a sight that radiated depth and craftsmanship.

The noodles combined medium-thick curly strands and wide, flat ribbons, giving both chewiness and tension with every bite. Along with seaweed, bamboo shoots, scallions, and soft wonton-style noodles, the dish gained visual flair and hearty texture. A thin layer of pork back fat on the surface sealed the richness, adding a smooth, satisfying depth.
Leaning in, I caught that unmistakable niboshi aroma—bold yet clean, mixing with a breeze of ocean salt. It was a sensory rush.
Harmony of Flavor and Texture
My first sip confirmed everything: the broth was rich, layered, and astonishingly clear. The niboshi umami spread across my tongue without any bitterness, showcasing masterful balance. Subtle notes of Rishiri kelp and bonito added elegance, making the soup so drinkable that I had to stop myself from finishing it too quickly.

The noodles absorbed the broth beautifully—the curly ones gripping the soup, while the ribbon-like ones offered bouncy, mochi-like texture. Each slurp felt wild and joyful, the hallmark of a great ramen experience.
The crisp menma, silky wonton-style noodles, and savory broth created the perfect contrast in texture. As one Retty user put it, “It’s a carb festival worth celebrating!”
A Must-Try Lunch Spot in Yokohama
I finished the bowl entirely—satisfied and smiling. At roughly 1400 yen, this ramen offers remarkable value.
